Apple – Yam- Sausage Bake

This is one my favorite recipes that a friend of mine concocted.  For my friends that do not eat sugar I leave out the brown sugar and it is great without it.  My family loves this so much I usually bake a double batch so we have left overs for a couple days.  I hope you enjoy this as much as we do.  Blessings ~ Tammy

1 pound fresh sausage

1 pound sweet potatoes, canned ( I personally cook mine up the day before because I like fresh)

1 pound apples, tart ( I use Granny Smith)

1/8 cup brown sugar

1/4 teaspoon cinnamon

1/4 teaspoon dried sage, watch

1 cup apple juice

1/4 stick butter

salt and pepper

Saute sausage until crumbled and no longer pink.  Set aside.  Slice apples and saute in same pan as sausage until blazed but not mushy. 

Layer half of the potatoes in buttered ovenware pan.  Mix apples and sausage together.  Layer this mixture over potatoes.  Cover with remaining potatoes.

Mix spices and sprinkle over last potato layer.  Moisten gently with 1 cup apple juice.  Sprinkle with brown sugar.  Cut butter in thin slices and dot over top of pan.  Bake in 350° oven for 40-45 minutes.  If it looks dry use remaining apple juice.
