Bran Muffin Recipe (sugar, wheat,white flour free)

For many of you it is in your best interest to eat sugar, wheat and white flour free.  It is so hard in the beginning to figure out what you can eat.  I wanted to post one of my favorite muffin recipes. 

3oz tofu (I use the silken, plain)

1 egg

1/3 c powdered skim milk

1/2c oatbran

1 tsp. cinnamon

1c of any fruit ( I use blueberries and peaches most often)

Bake for 35 minutes at 350° in a small loaf pan or about 25 minutes if you want to use muffin tins.  The batter is kind of thick and you can just shape it on a sheet and bake if necessary.  I can make 5 servings from one package of tofu.  I make all of it at once and freeze them. 

Remember that you deserve to eat in your bodies best interest.  Continue to search for the foods that make you feel your best.  Your best includes having good energy and your mind being clear.  I spent a life time feeding my body sugar and caffiene as fuel but couldn’t understand why I was nervous, anxious, depressed and had difficulty with memory and concentration. 

If you put mud or sugar in the gas tank of your car you would expect it to not get you where you wanted to go.  Why is it that we care more about the fuel we give our car than we do the fuel we give our body?
